Ingredients

- 2 cups of rice
- 1 can of black beans
- 1 cup of corn
- 1 cup of diced tomatoes
- 1 tablespoon of cumin
- 1 tablespoon of chili powder
- Salt to taste
- 1 tablespoon of olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add the rice and toast for 2-3 minutes.
- Add water according to rice package instructions and bring to a boil.
- Reduce heat, cover, and simmer until rice is cooked.
- In a separate pan, combine black beans, corn, diced tomatoes, cumin, chili powder, and salt. Cook until heated through.
- Fluff the rice and serve topped with the bean mixture.
- Garnish with fresh cilantro.

- Adjust spices according to your taste.
- Serve with avocado or sour cream if desired.
