Description

A flavorful Mexican chicken dish with sweet potatoes and black beans cooked in one skillet.


Ingredients

  • 2 chicken breasts, diced
  • 1 medium sweet potato, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add diced chicken and cook until no longer pink.
  4. Add sweet potato, bell pepper, cumin, chili powder, salt, and pepper.
  5. Cook until sweet potatoes are tender, about 15-20 minutes.
  6. Stir in black beans and heat through.
  7. Serve hot and enjoy.
