Ingredients

  • Cooked chicken: 2 cups, shredded
  • Black beans: 1 can (15 oz), drained and rinsed
  • Corn: 1 can (15 oz), drained
  • Salsa: 2 cups
  • Tortillas: 8 large flour or corn tortillas
  • Cheese: 2 cups, shredded (cheddar or Mexican blend)
  • Cumin: 1 teaspoon
  • Chili powder: 1 teaspoon
  • Cilantro: 1/4 cup, chopped (for garnish)
  • Salt: to taste
  • Pepper: to taste
  • Olive oil: 1 tablespoon (for greasing the dish)

Instructions

  1. Prep your ingredients by shredding the cooked chicken, draining and rinsing the black beans and corn, and chopping the cilantro.
  2. If using raw chicken, cook it by boiling, grilling, or baking until fully cooked, then shred.
  3. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with olive oil.
  4. Layer 4 tortillas at the bottom of the dish, followed by half of the chicken and bean mixture, and 1 cup of shredded cheese. Repeat with another layer of tortillas, remaining filling, and top with the rest of the cheese.
  5. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is melted and golden brown.
  6. Let the casserole cool for a few minutes, then cut into squares and garnish with fresh cilantro. Serve with sides like sour cream or guacamole.
