- 2 cups black beans, soaked overnight
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Drain and rinse the soaked black beans.
- In a pot, sauté the onion and garlic until soft.
- Add the cumin and chili powder, stir for 1 minute.
- Add the black beans and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 1.5 hours or until beans are tender.
- Add salt to taste.
- Garnish with fresh cilantro before serving.
