- 1 cup long-grain white rice
- 1 can (15 oz) diced tomatoes
- 1 cup beef broth
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced

- Salt and pepper to taste
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Stir in chili powder, cumin, salt, and pepper.
- Add rice, diced tomatoes, and beef broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Stir in cheese until melted. Garnish with cilantro.
