Ingredients

- 1 pound shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shrimp and cook until pink, about 3-4 minutes.
- In a large bowl, combine avocados, tomatoes, cucumber, and red onion.
- Add cooked shrimp to the bowl.
- Drizzle with lemon juice, then season with salt and pepper.
- Toss gently to combine.
- Garnish with fresh parsley before serving.
