Ingredients

- 1 cup brown rice
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the brown rice under cold water.
- In a pot, combine rice and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes or until rice is tender.
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and olives.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Once rice is cooked, let it cool slightly and then add to the vegetable mixture.
- Drizzle the dressing over the bowl and toss to combine.
- Top with feta cheese before serving.
Notes
- Use quinoa instead of rice for a gluten-free option.
- Add grilled chicken or shrimp for extra protein.
- Store leftovers in the fridge for up to 3 days.
