Ingredients

- 1 cup brown rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in cumin and paprika, cook for 1 minute.
- Add rice and stir to coat with spices.
- Pour in diced tomatoes and 2 cups of water.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 35-40 minutes until rice is tender.
- Fold in chickpeas and heat through.
- Season with salt and pepper.
- Garnish with parsley before serving.

- Use brown rice for added fiber.
- Adjust spices to your taste.
