Ingredients

  • 1 cup brown rice
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in cumin and paprika, cook for 1 minute.
  4. Add rice and stir to coat with spices.
  5. Pour in diced tomatoes and 2 cups of water.
  6. Bring to a boil, then reduce heat to low and cover.
  7. Cook for 35-40 minutes until rice is tender.
  8. Fold in chickpeas and heat through.
  9. Season with salt and pepper.
  10. Garnish with parsley before serving.
