Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • 1/2 Red Onion, finely chopped
  • 1/4 cup Fresh Parsley, chopped
  • 1/2 cup Feta Cheese, crumbled
  • 1/2 cup Olives, sliced
  • 1/4 cup Lemon Juice
  • 1/4 cup Olive Oil
  • Salt and Black Pepper to taste

Instructions

  1. Rinse the quinoa under cold water and combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes until fluffy.
  2. Prepare the vegetables: halve the cherry tomatoes, dice the cucumber, finely chop the red onion, slice the olives, and chop the parsley.
  3. In a large bowl, combine the cooked quinoa with the prepared vegetables and crumbled feta cheese.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper to make the dressing.
  5. Pour the dressing over the quinoa and vegetable mixture and gently toss to combine.
  6. Chill the salad for about 30 minutes before serving for the best flavor.
