A vibrant and nutritious Mediterranean Quinoa Salad packed with fresh vegetables, quinoa, and a zesty dressing.


Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • 1 Red Onion, finely chopped
  • 1/2 cup Kalamata Olives, sliced
  • 1/4 cup Fresh Parsley, chopped
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Olive Oil
  • 2 tablespoons Lemon Juice
  • Salt and Pepper to taste

Instructions

  1. Rinse the quinoa under cold water for 1-2 minutes.
  2. Cook the quinoa in a saucepan with 2 cups of water, bring to a boil, then simmer for 15 minutes.
  3. Chop the cherry tomatoes, cucumber, red onion, and slice the Kalamata olives.
  4. In a large bowl, combine the chopped vegetables with crumbled feta and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  6. Add the cooled quinoa to the vegetable mixture, pour the dressing over, and toss gently.
  7. Chill the salad for 30 minutes before serving for best flavor.
