Ingredients

- 1 cup Quinoa
- 2 cups Water
- 1 cup Cherry Tomatoes, halved
- 1 Cucumber, diced
- 1 Red Onion, finely chopped
- 1/2 cup Kalamata Olives, sliced
- 1/4 cup Fresh Parsley, chopped
- 1/2 cup Feta Cheese, crumbled
- 1/4 cup Olive Oil
- 2 tablespoons Lemon Juice
- Salt and Pepper to taste
Instructions
- Rinse the quinoa under cold water for 1-2 minutes.
- Cook the quinoa in a saucepan with 2 cups of water, bring to a boil, then simmer for 15 minutes.
- Chop the cherry tomatoes, cucumber, red onion, and slice the Kalamata olives.
- In a large bowl, combine the chopped vegetables with crumbled feta and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
- Add the cooled quinoa to the vegetable mixture, pour the dressing over, and toss gently.
- Chill the salad for 30 minutes before serving for best flavor.
