Description
A delicious combination of spinach, feta, and mozzarella in a crispy quesadilla.
Ingredients

- 1 cup fresh spinach
- 1/2 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 4 flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add spinach and sauté until wilted.
- Remove from heat and mix in feta and mozzarella.
- Place the mixture on half of each tortilla.
- Fold the tortillas in half and cook in the skillet until golden brown on both sides.
- Slice and serve hot.

- Adjust cheese quantities to your taste.
- Serve with salsa or yogurt for dipping.
