Description

A delicious combination of spinach, feta, and mozzarella in a crispy quesadilla.


Ingredients

  • 1 cup fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add spinach and sauté until wilted.
  3. Remove from heat and mix in feta and mozzarella.
  4. Place the mixture on half of each tortilla.
  5. Fold the tortillas in half and cook in the skillet until golden brown on both sides.
  6. Slice and serve hot.
