Ingredients

  • Pasta: 250 grams (8.8 oz) fusilli or penne
  • Cherry Tomatoes: 200 grams (7 oz), halved
  • Cucumber: 1 medium, diced
  • Red Onion: 1 small, finely chopped
  • Olives: 100 grams (3.5 oz), pitted and sliced
  • Feta Cheese: 150 grams (5.3 oz), crumbled
  • Olive Oil: 4 tablespoons
  • Lemon Juice: 2 tablespoons
  • Dried Oregano: 1 teaspoon
  • Salt and Pepper: to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the vegetables: wash, halve the cherry tomatoes, dice the cucumber, and chop the red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  4. In a large mixing bowl, combine the cooled pasta, prepared vegetables, olives, and feta cheese.
  5. Pour the dressing over the salad and gently toss to combine.
