Ingredients
- Pasta: 250 grams (8.8 oz) fusilli or penne
- Cherry Tomatoes: 200 grams (7 oz), halved
- Cucumber: 1 medium, diced
- Red Onion: 1 small, finely chopped
- Olives: 100 grams (3.5 oz), pitted and sliced
- Feta Cheese: 150 grams (5.3 oz), crumbled
- Olive Oil: 4 tablespoons
- Lemon Juice: 2 tablespoons
- Dried Oregano: 1 teaspoon
- Salt and Pepper: to taste
Instructions
- Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- Prepare the vegetables: wash, halve the cherry tomatoes, dice the cucumber, and chop the red onion.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- In a large mixing bowl, combine the cooled pasta, prepared vegetables, olives, and feta cheese.
- Pour the dressing over the salad and gently toss to combine.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
