Ingredients

- 2 chicken breasts
- 2 tablespoons olive oil
- 1 lemon, juiced
- 2 tablespoons fresh dill, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
Instructions
- Preheat the grill to medium heat.
- In a bowl, mix olive oil, lemon juice, dill, garlic powder, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Grill the chicken for 6-7 minutes on each side until cooked through.
- Let the chicken rest for 5 minutes before slicing.
- In bowls, combine quinoa, cherry tomatoes, cucumber, and red onion.
- Top with sliced chicken and sprinkle feta cheese on top.

- Store leftovers in the refrigerator for up to 3 days.
