Ingredients

  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the grill to medium heat.
  2. In a bowl, mix olive oil, lemon juice, dill, garlic powder, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Grill the chicken for 6-7 minutes on each side until cooked through.
  5. Let the chicken rest for 5 minutes before slicing.
  6. In bowls, combine quinoa, cherry tomatoes, cucumber, and red onion.
  7. Top with sliced chicken and sprinkle feta cheese on top.
