A quick and healthy stir fry with Mediterranean flavors using ground beef and fresh vegetables.
Ingredients

- 1 lb ground beef
- 2 cups bell peppers, chopped
- 1 cup zucchini, sliced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Add ground beef, cook until browned.
- Stir in bell peppers and zucchini, cook for 5-7 minutes.
- Add oregano, cumin, salt, and pepper; mix well.
- Cook for another 2-3 minutes until veggies are tender.
- Serve hot.

- Feel free to add your favorite vegetables.
- Serve with rice or quinoa for a complete meal.
- Store leftovers in an airtight container in the fridge.
