A refreshing and healthy Mediterranean Chickpea Pasta Salad.
Ingredients

- 2 cups cooked pasta
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a large bowl, combine cooked pasta and chickpeas.
- Add cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- This salad is best served cold.
- You can add other vegetables like bell peppers or olives.
- Store leftovers in an airtight container in the refrigerator.
