A refreshing Mediterranean chicken pasta salad perfect for lunch or dinner.
Ingredients

- 2 cups cooked pasta
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, chopped
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- Drain and rinse the pasta under cold water.
- In a large bowl, combine the cooked pasta, chicken, tomatoes, cucumber, red onion, olives, and feta cheese.
- In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For added flavor, marinate the chicken in Mediterranean spices before cooking.
- You can substitute any vegetables based on your preference.
- This salad can be made a day in advance.
