Description

A simple Mediterranean chicken and orzo dish that combines tender chicken, flavorful herbs, and orzo pasta.


Ingredients

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup parsley, chopped

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced chicken, season with salt and pepper, and cook until browned.
  3. Stir in garlic and oregano, cooking for another minute.
  4. Add orzo and chicken broth, bringing to a boil.
  5. Reduce heat, cover, and simmer for 10 minutes.
  6. Stir in cherry tomatoes and lemon juice, cooking for another 5 minutes.
  7. Remove from heat and stir in parsley before serving.
