Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 6 cups beef broth
- 1 can diced tomatoes
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, and Italian seasoning.
- Shape the mixture into small meatballs.
- In a large pot, heat beef broth over medium heat.
- Add diced tomatoes, carrots, celery, and onion to the pot.
- Bring the mixture to a boil, then reduce heat to simmer.
- Add meatballs to the pot and cook for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.

- Feel free to add other vegetables like peas or corn.
- For more flavor, add herbs like basil or oregano.
