Ingredients

- 2 cups of leftover rice
- 1 cup of mixed vegetables
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat sesame oil in a pan over medium heat.
- Add mixed vegetables and sauté for 3-4 minutes.
- Push vegetables to one side and crack the eggs into the pan. Scramble until cooked.
- Add leftover rice and soy sauce. Stir to combine.
- Season with salt and pepper. Cook for an additional 2-3 minutes.
