Ingredients

- 4 boneless chicken breasts
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup spinach, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper. Brown the chicken in the skillet for 5 minutes on each side.
- Remove chicken and set aside. In the same skillet, add garlic and sauté for 1 minute.
- Add sun-dried tomatoes, spinach, chicken broth, and heavy cream. Stir well.
- Return chicken to the skillet. Sprinkle with Italian seasoning.
- Transfer the skillet to the oven and bake for 25-30 minutes.
- Serve hot and enjoy.
Notes
- Serve with pasta or rice for a complete meal.
- You can substitute chicken thighs for chicken breasts if preferred.
- Leftovers can be stored in the refrigerator for up to 3 days.
