A delicious and easy make-ahead pasta salad perfect for potlucks.
Ingredients

- 2 cups rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup parsley, chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions.
- Drain and rinse the pasta under cold water.
- In a large bowl, combine the pasta, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
- Pour the Italian dressing over the salad and mix well.
- Add salt and pepper to taste.
- Cover and refrigerate for at least 2 hours before serving.
Notes
- Can be made a day in advance.
- Feel free to add your favorite vegetables.
- Store leftovers in the fridge for up to 3 days.
