Ingredients

  • 2 cups rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup parsley, chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions.
  2. Drain and rinse the pasta under cold water.
  3. In a large bowl, combine the pasta, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  4. Pour the Italian dressing over the salad and mix well.
  5. Add salt and pepper to taste.
  6. Cover and refrigerate for at least 2 hours before serving.
