Ingredients

- 2 cups cooked rice
- 1 cup black beans
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- Salt to taste
- 1 tablespoon olive oil
Instructions
- In a large bowl, combine rice, beans, corn, and tomatoes.
- Add cumin, chili powder, and salt. Mix well.
- Drizzle olive oil over the mixture and stir.
- Transfer to a baking dish and top with cheese.
- Cover and refrigerate until ready to bake.
- Preheat the oven to 350°F (175°C).
- Bake for 25-30 minutes until heated through and cheese is melted.
Notes
- This meal can be stored in the refrigerator for up to 3 days.
- Adjust spices according to your taste.
- Can be served with avocado or sour cream.
