A hearty low carb white chicken chili that’s perfect for a comforting meal.
Ingredients

- 2 cups cooked shredded chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup diced green chilies
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp black pepper
- 1/2 cup sour cream
- 1/2 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- In a pot, sauté onion and garlic until soft.
- Add chicken, white beans, chicken broth, green chilies, cumin, oregano, and black pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream and cheese until melted.
- Serve hot, garnished with cilantro.
Notes
- Use rotisserie chicken for convenience.
- Adjust spices to your taste.
- Can be kept in the refrigerator for up to 3 days.
