Ingredients

  • Turkey – 1 whole, 12-14 lbs
  • Butter – 1 cup, softened
  • Garlic – 4 cloves, minced
  • Fresh rosemary – 2 tbsp, chopped
  • Fresh thyme – 2 tbsp, chopped
  • Salt – 2 tsp
  • Pepper – 1 tsp
  • Cauliflower – 2 heads, chopped
  • Heavy cream – 1 cup
  • Cheddar cheese – 1 cup, shredded

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Mix butter, garlic, rosemary, thyme, salt, and pepper in a bowl.
  3. Rub the mixture under the turkey skin and on the outside.
  4. Place the turkey in a roasting pan and roast for 3-4 hours until cooked through.
  5. While the turkey cooks, steam the cauliflower until tender.
  6. Blend cauliflower with heavy cream and cheese until smooth.
  7. Season with salt and pepper to taste.
  8. Serve turkey with cauliflower mash.

  • Let the turkey rest for 20 minutes before carving.
