Ingredients
- Turkey – 1 whole, 12-14 lbs
- Butter – 1 cup, softened
- Garlic – 4 cloves, minced
- Fresh rosemary – 2 tbsp, chopped
- Fresh thyme – 2 tbsp, chopped
- Salt – 2 tsp
- Pepper – 1 tsp
- Cauliflower – 2 heads, chopped
- Heavy cream – 1 cup
- Cheddar cheese – 1 cup, shredded
Instructions
- Preheat the oven to 325°F (165°C).
- Mix butter, garlic, rosemary, thyme, salt, and pepper in a bowl.
- Rub the mixture under the turkey skin and on the outside.
- Place the turkey in a roasting pan and roast for 3-4 hours until cooked through.
- While the turkey cooks, steam the cauliflower until tender.
- Blend cauliflower with heavy cream and cheese until smooth.
- Season with salt and pepper to taste.
- Serve turkey with cauliflower mash.
Notes
- Let the turkey rest for 20 minutes before carving.
- Try adding different herbs for flavor variations.
- Make the cauliflower mash ahead and reheat before serving.
