Ingredients

- Erythritol: 3/4 cup (about 150 g)

- Eggs: 3 large
- Vanilla extract: 1 teaspoon (about 5 ml)
- Baking powder: 1 teaspoon (about 5 g)
- Heavy cream: 1 cup (about 240 ml)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
- In a bowl, mix almond flour, cocoa powder, baking powder, and erythritol until well combined.
- In a microwave-safe bowl, combine chopped unsweetened chocolate with 1/4 cup of erythritol and microwave in 30-second intervals until melted.
- In a large mixing bowl, beat the eggs until frothy, then add the melted chocolate mixture and vanilla extract, mixing until combined.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Pour the batter into the prepared baking pan and bake for 20-25 minutes, checking with a toothpick for doneness.
- Allow the squares to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Whip the heavy cream until soft peaks form, optionally sweetening with erythritol.
- Once cooled, cut the squares and top each with whipped cream and a dusting of cocoa powder before serving.
