Description

A delightful low-carb dessert that satisfies chocolate cravings without guilt, featuring rich, creamy chocolate mousse squares.

Ingredients

  • Almond flour: 1 cup (about 100 g)
  • Erythritol: 3/4 cup (about 150 g)
  • Cocoa powder: 1/2 cup (about 50 g)
  • Unsweetened chocolate: 4 oz (about 113 g), chopped
  • Eggs: 3 large
  • Vanilla extract: 1 teaspoon (about 5 ml)
  • Baking powder: 1 teaspoon (about 5 g)
  • Heavy cream: 1 cup (about 240 ml)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
  2. In a bowl, mix almond flour, cocoa powder, baking powder, and erythritol until well combined.
  3. In a microwave-safe bowl, combine chopped unsweetened chocolate with 1/4 cup of erythritol and microwave in 30-second intervals until melted.
  4. In a large mixing bowl, beat the eggs until frothy, then add the melted chocolate mixture and vanilla extract, mixing until combined.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Pour the batter into the prepared baking pan and bake for 20-25 minutes, checking with a toothpick for doneness.
  7. Allow the squares to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Whip the heavy cream until soft peaks form, optionally sweetening with erythritol.
  9. Once cooled, cut the squares and top each with whipped cream and a dusting of cocoa powder before serving.
