A refreshing low-calorie pasta salad perfect for a light meal.
Ingredients

- 8 oz whole wheat pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, and red onion.
- Add the cooled pasta to the bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Sprinkle feta cheese on top before serving.

- Use any vegetables you prefer.
- Store leftovers in the refrigerator for up to 3 days.
