Ingredients

- 8 ounces penne pasta
- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 ounces)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F.
- Cook the penne pasta according to package instructions, then drain.
- In a large skillet, cook the sausage over medium heat until browned.
- Add the bell pepper, onion, and garlic to the skillet. Sauté until softened.
- Stir in the shrimp and cook until pink.
- Add the diced tomatoes, heavy cream, Cajun seasoning, salt, and pepper. Simmer for 5 minutes.
- Combine the pasta with the shrimp mixture and half the cheese.
- Transfer to a baking dish and top with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden.
Notes
- You can use any type of pasta you prefer.
- Adjust the Cajun seasoning to your taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
