Ingredients

  • 8 ounces penne pasta
  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Cook the penne pasta according to package instructions, then drain.
  3. In a large skillet, cook the sausage over medium heat until browned.
  4. Add the bell pepper, onion, and garlic to the skillet. Sauté until softened.
  5. Stir in the shrimp and cook until pink.
  6. Add the diced tomatoes, heavy cream, Cajun seasoning, salt, and pepper. Simmer for 5 minutes.
  7. Combine the pasta with the shrimp mixture and half the cheese.
  8. Transfer to a baking dish and top with remaining cheese.
  9. Bake for 25-30 minutes until bubbly and golden.
