A hearty and flavorful Louisiana seafood gumbo made with a blend of seafood and spices.
Ingredients

- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 pound shrimp, peeled and deveined
- 1 pound crab meat
- 1 pound fish fillets, cut into pieces
- 6 cups seafood stock
- 2 bay leaves
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 cups okra, sliced
- Cooked rice for serving
Instructions
- In a large pot, heat vegetable oil over medium heat.
- Whisk in flour to make a roux, stirring constantly until it turns dark brown.
- Add onion, bell pepper, celery, and garlic to the pot. Cook until softened.
- Pour in seafood stock and add bay leaves and Cajun seasoning.
- Bring to a simmer and cook for 30 minutes.
- Add shrimp, crab, fish, and okra. Cook for an additional 10 minutes.
- Season with salt and pepper.
- Serve over cooked rice.
Notes
- Adjust spices to your taste.
- Use fresh seafood for the best flavor.
- Gumbo can be made a day in advance and tastes better the next day.
