Description

A nutritious and filling bowl featuring grilled chicken and sweet potatoes.


Ingredients

Scale
  • 2 grilled chicken breasts
  • 2 medium sweet potatoes, cubed
  • 1 cup quinoa, cooked
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup spinach
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with olive oil, paprika, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side until cooked through.
  4. While the chicken is grilling, boil sweet potatoes until tender, about 15 minutes.
  5. In a bowl, combine cooked quinoa, black beans, and spinach.
  6. Once the chicken and sweet potatoes are done, slice the chicken and add it to the bowl.
  7. Add sweet potatoes and avocado on top.
  8. Drizzle with additional olive oil if desired.
  9. Serve immediately.
