A creamy and cheesy loaded cauliflower casserole that is a great side dish.

- 1 large head of cauliflower, cut into florets
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled bacon
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Steam the cauliflower florets until tender.
- In a mixing bowl, combine sour cream, garlic powder, salt, and pepper.
- Add the steamed cauliflower, half of the cheddar cheese, bacon, and green onions. Mix well.
- Transfer the mixture to a baking dish and spread evenly.
- Top with the remaining cheddar cheese.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
Notes
- Feel free to add more vegetables if desired.
- This dish can be made ahead of time and reheated.
- Use low-fat sour cream for a lighter option.
