Ingredients

- 4 medium potatoes, diced
- 2 cups broccoli florets
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with olive oil, salt, and pepper.
- Spread potatoes on a baking sheet and bake for 25 minutes.
- Add broccoli to the baking sheet and bake for an additional 10 minutes.
- Remove from oven and mix in cheese, sour cream, and green onions.
- Bake for another 5 minutes until cheese is melted.

- Adjust cooking time based on potato size.
