Ingredients

  • 2 cups mashed potatoes
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 1 large egg
  • 1/4 cup water

Instructions

  1. In a bowl, mix mashed potatoes, cheddar cheese, sour cream, green onions, garlic powder, and salt.
  2. In another bowl, combine flour, egg, and water to form a dough.
  3. Roll out the dough and cut into circles.
  4. Place a spoonful of the potato mixture in the center of each circle.
  5. Fold the dough over and pinch to seal.
  6. Boil pierogi in salted water until they float.
  7. Fry in butter until golden brown.

Notes

  • Use leftover mashed potatoes for convenience.
