A delicious twist on traditional pierogi, filled with loaded baked potato ingredients.
Ingredients

- 2 cups mashed potatoes
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 cups all-purpose flour
- 1 large egg
- 1/4 cup water
Instructions
- In a bowl, mix mashed potatoes, cheddar cheese, sour cream, green onions, garlic powder, and salt.
- In another bowl, combine flour, egg, and water to form a dough.
- Roll out the dough and cut into circles.
- Place a spoonful of the potato mixture in the center of each circle.
- Fold the dough over and pinch to seal.
- Boil pierogi in salted water until they float.
- Fry in butter until golden brown.
Notes
- Use leftover mashed potatoes for convenience.
- Adjust seasoning to your taste.
- Serve with extra sour cream and green onions.
