Ingredients
- Lo mein noodles – 8 oz
- Soy sauce – 1/4 cup
- Sesame oil – 2 tbsp
- Garlic – 2 cloves, minced
- Ginger – 1 inch, minced
- Bell peppers – 1 cup, sliced
- Carrots – 1 cup, julienned
- Broccoli – 1 cup, florets
- Green onions – 1/2 cup, chopped
- Protein (chicken or tofu) – 1 cup, sliced or cubed
Instructions
- Prepare the noodles by boiling them in water for 4-5 minutes until al dente, then drain and rinse under cold water.
- Chop the vegetables: slice bell peppers, julienne carrots, cut broccoli into florets, and chop green onions.
- Cook the protein in a skillet with sesame oil until browned and cooked through, then set aside.
- In the same skillet, sauté garlic and ginger for 30 seconds, then add the chopped vegetables and stir-fry for 3-5 minutes.
- Add the cooked noodles and soy sauce to the skillet, toss everything together, and add the cooked protein. Stir in green onions and heat through for 1-2 minutes.
