Ingredients

  • Lo mein noodles – 8 oz
  • Soy sauce – 1/4 cup
  • Sesame oil – 2 tbsp
  • Garlic – 2 cloves, minced
  • Ginger – 1 inch, minced
  • Bell peppers – 1 cup, sliced
  • Carrots – 1 cup, julienned
  • Broccoli – 1 cup, florets
  • Green onions – 1/2 cup, chopped
  • Protein (chicken or tofu) – 1 cup, sliced or cubed

Instructions

  1. Prepare the noodles by boiling them in water for 4-5 minutes until al dente, then drain and rinse under cold water.
  2. Chop the vegetables: slice bell peppers, julienne carrots, cut broccoli into florets, and chop green onions.
  3. Cook the protein in a skillet with sesame oil until browned and cooked through, then set aside.
  4. In the same skillet, sauté garlic and ginger for 30 seconds, then add the chopped vegetables and stir-fry for 3-5 minutes.
