Description

Linzer cookies are traditional Austrian treats made from buttery almond dough and filled with fruit jam.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 cup ground almonds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar.
  3. Add the ground almonds, vanilla, and salt. Mix until combined.
  4. Gradually add the flour until a dough forms.
  5. Chill the dough for 30 minutes.
  6. Roll out the dough on a floured surface to 1/4 inch thickness.
  7. Cut out cookies with a cookie cutter.
  8. Cut out centers in half of the cookies.
  9. Place cookies on a baking sheet and bake for 10-12 minutes.
  10. Let the cookies cool completely.
  11. Spread raspberry jam on the solid cookies and top with the cut-out cookies.
