Description
Linzer cookies are traditional Austrian treats made from buttery almond dough and filled with fruit jam.
Ingredients

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 cup ground almonds
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and powdered sugar.
- Add the ground almonds, vanilla, and salt. Mix until combined.
- Gradually add the flour until a dough forms.
- Chill the dough for 30 minutes.
- Roll out the dough on a floured surface to 1/4 inch thickness.
- Cut out cookies with a cookie cutter.
- Cut out centers in half of the cookies.
- Place cookies on a baking sheet and bake for 10-12 minutes.
- Let the cookies cool completely.
- Spread raspberry jam on the solid cookies and top with the cut-out cookies.
Notes
- Use any fruit jam you like.
- Store cookies in an airtight container.
- Dust with powdered sugar before serving.
