Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 2 teaspoons gelatin powder
  • 3 tablespoons water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  3. Bake the crust for 10 minutes and let it cool.
  4. In a bowl, beat cream cheese and sugar until smooth.
  5. In a small bowl, dissolve gelatin in water and let it sit for 5 minutes.
  6. Heat the gelatin mixture until dissolved, then add lime juice and zest.
  7. Mix the gelatin mixture into the cream cheese mixture.
  8. Whip the heavy cream until soft peaks form and fold it into the cream cheese mixture.
  9. Pour the filling over the crust and refrigerate for at least 4 hours.
  10. Serve chilled and enjoy.
