Description
A refreshing dessert combining lime mousse and cheesecake.
Ingredients

- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 cup heavy cream
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 2 teaspoons gelatin powder
- 3 tablespoons water
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- Bake the crust for 10 minutes and let it cool.
- In a bowl, beat cream cheese and sugar until smooth.
- In a small bowl, dissolve gelatin in water and let it sit for 5 minutes.
- Heat the gelatin mixture until dissolved, then add lime juice and zest.
- Mix the gelatin mixture into the cream cheese mixture.
- Whip the heavy cream until soft peaks form and fold it into the cream cheese mixture.
- Pour the filling over the crust and refrigerate for at least 4 hours.
- Serve chilled and enjoy.
Notes
- Use fresh limes for best flavor.
- Chill the cheesecake overnight for a firmer texture.
