  • Vegetable broth: 4 cups
  • Diced tomatoes: 1 can (14.5 oz)
  • Bay leaves: 2
  • Dried thyme: 1 teaspoon
  • Salt and pepper: to taste
  • Olive oil: 2 tablespoons (for sautéing)

Instructions

  1. Prepare the vegetables by washing, peeling, and dicing the carrots, celery, and onion, and mincing the garlic.
  2. In a large pot, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add minced garlic, diced carrots, and celery, cooking for another 5 minutes.
  4. Stir in the rinsed green lentils, vegetable broth, diced tomatoes, bay leaves, and dried thyme.
  5. Bring the mixture to a boil, then reduce heat to low and let it simmer for 30-35 minutes.
  6. Remove bay leaves, season with salt and pepper, and add optional ingredients like balsamic vinegar or lemon juice before serving.
