Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, 1/2 cup sugar, and melted butter.
  3. Press mixture into the bottom of a springform pan.
  4. Beat cream cheese and 1 cup sugar until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Stir in lemon juice, lemon zest, and vanilla.
  7. Pour filling over crust.
  8. Bake for 55-60 minutes or until set.
  9. Let cool completely.
  10. Whip egg whites and cream of tartar until soft peaks form.
  11. Gradually add 1/2 cup sugar, beating until stiff peaks form.
  12. Spread meringue over cooled cheesecake.
  13. Bake for an additional 10 minutes until meringue is lightly browned.
  14. Cool and refrigerate for at least 4 hours before serving.
