A simple and delicious Lemon Herb Roasted Chicken recipe that combines bright flavors of lemon with fresh herbs for a mouthwatering meal.
Ingredients
- Whole chicken: 1 (about 4-5 lbs or 1.8-2.3 kg)
- Olive oil: 1/4 cup (60 ml)
- Garlic: 4 cloves, minced
- Fresh rosemary: 2 sprigs, chopped
- Fresh thyme: 2 sprigs, chopped
- Fresh parsley: 1/4 cup, chopped
- Lemon: 1, sliced
- Salt: 1 teaspoon (or to taste)
- Pepper: 1 teaspoon (or to taste)
Instructions
- Rinse the whole chicken under cold water and pat dry with paper towels.
- In a small bowl, combine olive oil, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper to create a marinade.
- Rub the herb mixture all over the chicken, ensuring to get it under the skin.
- Stuff lemon slices inside the cavity of the chicken.
- Place the chicken breast-side up in a roasting pan and roast in a preheated oven at 425°F (220°C) for about 1 hour and 15 minutes.
- Let the chicken rest for 10-15 minutes before carving and serving.
Notes
- Marinate the chicken for at least 1 hour, or overnight for best results.
- Adjust cooking times based on the size of the chicken.
- Cover with aluminum foil if the skin browns too quickly.
