Ingredients
- Whole chicken: 1 (about 4-5 lbs or 1.8-2.3 kg)
- Lemon: 1 large, sliced
- Garlic: 4 cloves, minced
- Fresh rosemary: 2 sprigs
- Fresh thyme: 2 sprigs
- Fresh parsley: 1/4 cup, chopped
- Olive oil: 1/4 cup
- Salt: 1 tablespoon
- Pepper: 1 teaspoon
Instructions
- Prepare the chicken by rinsing it under cold water and patting it dry.
- Make the lemon herb marinade by combining minced garlic, olive oil, salt, and pepper in a small bowl.
- Rub the marinade all over the chicken, ensuring to get it under the skin.
- Stuff the cavity of the chicken with fresh rosemary, thyme, and half of the lemon slices.
- Preheat the oven to 425°F (220°C) and roast the chicken for about 1 hour and 15 minutes, basting halfway through.
- Let the chicken rest for 10-15 minutes before carving and serving.
