Ingredients
- Chicken breasts: 4 pieces (about 1.5 to 2 lbs)
- Olive oil: 1/4 cup
- Lemon juice: 1/4 cup (freshly squeezed)
- Garlic: 4 cloves (minced)
- Fresh parsley: 2 tablespoons (chopped)
- Fresh thyme: 1 tablespoon (chopped)
- Fresh rosemary: 1 tablespoon (chopped)
- Salt: 1 teaspoon (or to taste)
- Pepper: 1/2 teaspoon (or to taste)
- Lemon zest: 1 teaspoon (for garnish)
Instructions
- Marinate the chicken by whisking together olive oil, lemon juice, minced garlic, chopped parsley, thyme, rosemary, salt, and pepper in a medium bowl.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes, up to 4 hours.
- Preheat the grill to medium-high heat (about 400°F or 200°C) and lightly oil the grates.
- Remove the chicken from the marinade and grill for 6-7 minutes on one side without moving it, then flip and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for about 5 minutes before slicing and serving with lemon zest and fresh herbs.
