  • Lemon juice: 1/4 cup (60 ml, freshly squeezed)
  • Garlic: 4 cloves (minced)
  • Fresh parsley: 2 tablespoons (chopped)
  • Fresh thyme: 1 tablespoon (chopped)
  • Fresh rosemary: 1 tablespoon (chopped)
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1/2 teaspoon (or to taste)
  • Lemon zest: 1 teaspoon (for garnish)

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, minced garlic, chopped parsley, chopped thyme, chopped rosemary, salt, and pepper in a medium bowl.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over, seal or cover, and refrigerate for at least 30 minutes (ideally 2-4 hours).
  3. Preheat the grill to medium-high heat (375°F to 450°F or 190°C to 230°C).
