Ingredients
- Chicken breasts: 4 pieces (about 1.5 lbs or 680 g)
- Olive oil: 1/4 cup (60 ml)
- Lemon juice: 1/4 cup (60 ml, freshly squeezed)
- Garlic: 4 cloves (minced)
- Fresh parsley: 2 tablespoons (chopped)
- Fresh thyme: 1 tablespoon (chopped)
- Fresh rosemary: 1 tablespoon (chopped)
- Salt: 1 teaspoon (or to taste)
- Pepper: 1/2 teaspoon (or to taste)
- Lemon zest: 1 teaspoon (for garnish)
Instructions
- Marinate the chicken by whisking together olive oil, lemon juice, minced garlic, chopped parsley, chopped thyme, chopped rosemary, salt, and pepper in a medium bowl.
- Place the chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over, seal or cover, and refrigerate for at least 30 minutes (ideally 2-4 hours).
- Preheat the grill to medium-high heat (375°F to 450°F or 190°C to 230°C).
- Remove the chicken from the marinade, letting excess drip off, and place on the grill. Cook for 6-7 minutes on one side without moving.
- Flip the chicken and cook for an additional 6-7 minutes until the internal temperature reaches 165°F (75°C).
- Remove from the grill, let rest for 5 minutes, slice, and garnish with lemon zest and fresh herbs.

- For juicier chicken, consider using thighs or drumsticks.
- Adjust the marinade to your taste by adding honey for sweetness or red pepper flakes for spice.
- Marinating overnight can enhance the flavors significantly.
