Ingredients

- 8 ounces pasta
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a large bowl, whisk together olive oil, garlic, lemon juice, and lemon zest.
- Add the cooked pasta to the bowl and toss to coat.
- Add cherry tomatoes, cucumber, and parsley.
- Season with salt and pepper.
- Chill in the refrigerator for 30 minutes before serving.
