Description

Ingredients

  • 1 pound scallops
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat.
  2. Season scallops with salt and pepper.
  3. Add scallops to the skillet and cook for 2-3 minutes on each side until golden brown.
  4. Remove scallops and set aside.
  5. In the same skillet, add garlic and sauté for 30 seconds.
  6. Add lemon juice, zest, and remaining butter to the skillet.
  7. Stir until butter is melted and sauce is combined.
  8. Return scallops to the skillet and coat with sauce.
  9. Garnish with parsley before serving.
