Ingredients

  • 4 salmon fillets
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic, minced
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the halved potatoes for 10 minutes.
  3. Drain potatoes and toss with olive oil, salt, and pepper.
  4. Spread potatoes on a baking sheet and roast for 20-25 minutes until crispy.
  5. In a skillet, melt butter and add garlic and lemon juice.
  6. Season salmon fillets with salt and pepper.
  7. Add salmon to the skillet and cook for 4-5 minutes on each side.
  8. Add broccoli to the skillet during the last 5 minutes of cooking.
  9. Serve salmon with crispy potatoes and broccoli.
