Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender
  • 2 tablespoons Earl Grey tea leaves
  • 5 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, heat the cream, milk, and sugar over medium heat until sugar dissolves.
  2. Add lavender and Earl Grey tea leaves. Let steep for 30 minutes.
  3. Strain the mixture to remove lavender and tea leaves.
  4. In a bowl, whisk the egg yolks. Gradually add the warm mixture to the yolks, whisking constantly.
  5. Return the mixture to the saucepan and cook over low heat until thickened.
  6. Remove from heat and stir in the vanilla extract.
  7. Chill the mixture in the refrigerator for at least 4 hours.
  8. Churn in an ice cream maker according to manufacturer’s instructions.
  9. Transfer to a container and freeze for at least 4 hours before serving.
