Description
A hearty lasagna soup made in a crockpot for an easy meal.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 2 cups uncooked pasta
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet and drain excess fat.
- Add onion and garlic, cooking until softened.
- Transfer the beef mixture to the crockpot.
- Add crushed tomatoes, beef broth, Italian seasoning, salt, and pepper.
- Cook on low for 6 hours.
- Stir in uncooked pasta and cook for an additional 30 minutes.
- Serve with ricotta and mozzarella cheese on top.
Notes
- Adjust seasoning to your taste.
- Top with fresh basil if desired.
- Store leftovers in the refrigerator.
