Description
Lasagna soup combines the flavors of traditional lasagna in a comforting soup form.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 28 ounces crushed tomatoes
- 4 cups beef broth
- 8 ounces lasagna noodles, broken
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Instructions
- In a large pot, brown the ground beef with onion and garlic over medium heat.
- Add crushed tomatoes, beef broth, basil, oregano, salt, and pepper.
- Bring to a boil and then reduce heat to simmer for 15 minutes.
- Add broken lasagna noodles and cook until tender, about 10 minutes.
- Stir in ricotta cheese and half the mozzarella until melted.
- Serve hot, topped with remaining mozzarella.
Notes
- You can use ground turkey for a lighter option.
- Add vegetables like spinach or zucchini for extra nutrition.
- Store leftovers in the refrigerator for up to 3 days.
