Description

Lasagna soup combines the flavors of traditional lasagna in a comforting soup form.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, brown the ground beef with onion and garlic over medium heat.
  2. Add crushed tomatoes, beef broth, basil, oregano, salt, and pepper.
  3. Bring to a boil and then reduce heat to simmer for 15 minutes.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Stir in ricotta cheese and half the mozzarella until melted.
  6. Serve hot, topped with remaining mozzarella.
