Description

A hearty and comforting lasagna soup that combines all the flavors of traditional lasagna in a warm bowl.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef with the chopped onion and minced garlic.
  2. Add crushed tomatoes, beef broth, and Italian seasoning. Bring to a simmer.
  3. Add broken lasagna noodles and cook until tender, about 10 minutes.
  4. Stir in ricotta cheese and half of the mozzarella cheese.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with remaining mozzarella and Parmesan cheese.
