A hearty and comforting lasagna soup that combines all the flavors of traditional lasagna in a warm bowl.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 8 oz lasagna noodles, broken
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef with the chopped onion and minced garlic.
- Add crushed tomatoes, beef broth, and Italian seasoning. Bring to a simmer.
- Add broken lasagna noodles and cook until tender, about 10 minutes.
- Stir in ricotta cheese and half of the mozzarella cheese.
- Season with salt and pepper to taste.
- Serve hot, garnished with remaining mozzarella and Parmesan cheese.
Notes
- This soup can be made ahead of time and reheated for later meals.
- Feel free to add vegetables like spinach or mushrooms for extra nutrition.
