Description
Lasagna rolls are a delightful twist on traditional lasagna, rolled up with a delicious filling of cheeses and vegetables, topped with marinara sauce and baked until bubbly.
Ingredients
- Lasagna noodles: 12 sheets
- Ricotta cheese: 2 cups
- Shredded mozzarella cheese: 2 cups
- Marinara sauce: 3 cups
- Fresh spinach: 2 cups, chopped
- Grated Parmesan cheese: 1/2 cup
- Garlic: 3 cloves, minced
- Italian seasoning: 1 teaspoon
- Salt and pepper: to taste
- Olive oil: 1 tablespoon
Instructions
- Prepare the lasagna noodles by boiling them in salted water until al dente, then drain and lay flat to cool.
- Make the filling by sautéing garlic in olive oil, adding spinach, and mixing with ricotta, half of the mozzarella, and seasoning.
- Assemble the rolls by spreading the filling on each noodle, rolling them up, and placing them seam-side down in a baking dish with marinara sauce on the bottom.
- Top the rolls with remaining marinara sauce and cheese, cover with foil, and bake at 375°F (190°C) for 25 minutes, then uncover and bake for an additional 15 minutes.
Notes
- Allow the sautéed spinach to cool before mixing with ricotta.
- Spread marinara sauce on the bottom of the baking dish to prevent sticking.
- Cover with foil during the first part of baking to keep the rolls moist.
