Description
A hearty kielbasa tortellini soup that warms you up.
Ingredients

- 1 lb kielbasa, sliced
- 2 cups tortellini
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 cup spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add kielbasa and cook until browned.
- Stir in carrots and cook for 5 minutes.
- Add chicken broth, tomatoes, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add tortellini and spinach, cooking until tortellini is tender.
- Season with salt and pepper before serving.
Notes
- Feel free to add other vegetables.
- Use fresh or frozen tortellini.
- Store leftovers in the refrigerator.
