Ingredients

  • 1 lb kielbasa, sliced
  • 2 cups tortellini
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 cup spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add kielbasa and cook until browned.
  3. Stir in carrots and cook for 5 minutes.
  4. Add chicken broth, tomatoes, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add tortellini and spinach, cooking until tortellini is tender.
  7. Season with salt and pepper before serving.
